I am finding meal times difficult because I want to keep a structured day but I'm just not hungry like usual at the same times, probably because of inactivity

I've been eating less as well. I may only have 1 meal a day because of it. I recommend supplements like protein shakes. Easy to consume, full of protein.

As for exercise... Cardio is the best but if you're stuck inside I guess core exercise like crunches and pushups might help.
