I made this last week. It was good.
[b]Black bean and corn enchiladas[/b]
1 can black beans (15 oz), rinsed & drained
1 can (15 oz) southwestern whole kernel corn with bell peppers - undrained
1 can green chiles - undrained
1 can Enchilada sauce (or buy sauce mix and make it according to directions
2 c shredded Mexican cheese blend
Flour tortillas
Preheat oven to 350
use non-stick spray or oil to grease a rectangular casserole dish and spread about 1/2 c of Enchildada sauce in the dish.
In a bowl. mix beans, corn, chiles, half of the cheese and 1/4 c enchilada sauce
Spoon 1/4 c of bean/corn mixture down the center of each tortilla and roll the tortilla into a tube, placing it seam side down in the casserole dish until the dish is covered with the enchiladas
Spoon remaining enchilada sauce onto the rolled enchiladas and the remaining cheese.
Spray or grease a sheet of foil and cover the casserole, sprayed side down.
Bake 30-35 minutes.
Serve with shredded lettuce, diced tomatoes and/or avocados, diced onion, more cheese and sour cream for toppings. (Or anything else that strikes your fancy)
