Like good morning, good afternoon and good evening, shouldn't we also use goodnight as a conversation starter?

It's a conversation ender. Because it implies a closing of the day/ aka closing of a conversation.

@Aperson The point is, the term 'good night' is a conversation ender. The right place to say it would be at the end of the conversation held at night.

Night is the end.
