Couple months late to the party, so sorry for the necromancy.
I enjoy both performers, but in general, Eminem's music is like popcorn to me - tasty, easy to enjoy, but ultimately lacking much substance. What you see is basically what you get.
In contrast, Immortal Technique's music always has the feeling of a meal to me. Beyond the, in my opinion, masterful poetry of the lyrics themselves, the emotions and messages contained within the lyrics typically requires a degree of attention beyond that of a passive listener, at least for me. Also, I find his use of art and talent for more than simple money-making admirable, and also far more interesting than simple commercially driven projects.

Both good in their own ways. Eminem would ruin immortal technique in a freestyle if it was back in the day. Immortal's more politically driven, he's more about getting a message across than making music that sells.
Hard to say otherwise as their personas/backgrounds are so different.

@Whatevergirl: I have the majority of his albums. I just think he's massively overrated because he didn't go mainstream
