1. Life skills (budgeting, cooking, sewing, cleaning for all students)
2. Critical analysis of the dicta of authority

@CoffeeFirst: of course, and I'm sure some ppl still do, but (1) is something everyone should be taught in high school, not just those who do Home Ec, and (2) is desparately needed long before you get to college - if you only start learning it there, you've already been inculcated deeply in the american cult of obediance and acceptance of authority.
