A Canning School

I have taught home canning before, and I really enjoy teaching it. A lot of people want to learn it these days, too.

I think that is awesome. I'm all for going back to basics with food, before chemicals were allowed to be put into food for the sake of convenience and cutting costs. Right on.

@Justagrrrl23: It's great for making a garden last all year as a food source. Also, many farms allow gleaning after the main commercial harvest. That's fun to do as a family and there's all that free food. Canning is quite a bit easier than most people think.

@Stereoguy: In my opinion, no, or at least not very well. I've looked at some of those videos and they vary quite a bit in quality. Some of them show techniques that are not very safe or out of date. Some of them do not explain details, like altitude or dealing with accidents. Learning canning from a video or even a book is possible, but awkward and not nearly as easy as having someone show you in a kitchen (preferably your own). Also, canning is a fun thing to do together in a small group.
