The pigmentation is on account of melanin. The shade of the skin depends on the amount of melanin but I don't think white skinned people lack it completely. So 'unpigmented' might not be the correct word.

You're correct. Very light skinned people still have melanin, just not very much. Only albinos lack melanin to the point of no pigmentation at all in skin, eyes or hair. Actually other parts not so visible too. I have no idea why we use black and white to label either races or skin colors. Misleading at best in both cases. It's ridiculous yet so much noise and strife is caused by them.
