@FreestyleArt I don't really understand how you think you can't. Your Youtube ID also gives you a channel to use. I admittedly haven't created youtube vids but I do watch creators who are incredibly cagey about their ID.
Even if you wanted to monetise I think there are options where you can do so without users getting your personal details.
EDIT: A VPN would be wise if you're that worried about google itself yes.
You can monetise through patreon, paypal etc or your own ad sources if Google require ID for adsense.
