Is it dumb or weird to maybe plan out what you'll say as a youtuber?

Mostly like beginning and end stuff?

Absolutely not, it makes it much better, every TV show you think is 'spontaneous' is probably planned as well. Having cute animations at the beginning and end or planned sections works very well.
