@SW-User I discovered how good Brazilian tapioca cheese bread is (baked in mini muffin pans) and have been making those once or twice a week now.

@SW-User It is, you mix it up in the blender and pour the batter in greased muffin pans. They have a different texture, chewy, more crispy if they are fresh and a little softer yet still chewy if you put the leftovers in a bag overnight. You can use any kind of grated cheese too. The hardest thing is finding the tapioca flour, I get mine at a small Hispanic grocery store but some health food stores have Bob's Red Mill tapioca flour.
