What do you like to bake

I have made cornbread and apple-cinnamon rolls so far. I was very good and gave away all but two of the apple rolls.
I want to make gingerbread next.
Thanksgiving I will make pies.
Christmas I always make sugar cookies and will make fudge to give away as gifts

I'm learning how to bake low-carb items including pumpkin pie with a coconut-flour/almond flour crust. Low-carb or resistant-carb pizzas, Brazilian cheese puff rolls, cloud bread, cloud bread apple cream cheese danish, and looking for cracker recipes to make.
