Why didn't Ned demand a Trial by Combat?

Could've been for a bunch of reasons. The concept of trial by combat went against his religious views. He was under the impression that he was getting sent to the wall to be with his brother and son. Maybe he realized he'd be having to fight either The Hound or Jamie and didn't stand a prayer of winning .
