handling cash is a good way to get ripped off for a business (you can be ripped off in other ways too obviously)

I doubt they will lose a lot of business because of it BUT I expect there to be lawsuits as US Currency by law is "legal tender for all debts public or private".

you could answer that buying something is not "a debt" - don't know if that would fly or not.

That's not anything unusual. The Starbucks I sometimes go to in Slough, in the UK is the same way. It was annoying one day because I wanted to use a £10 note because I needed a bit of change. Instead, I had to use my debit card.
