So what are they instead of chicken?

Read an article that they tested several restaurants like McDonald's and others, it said that 100 percent chicken with adding seasoning and other flavors its drops the percentage, but usually to like 80 percent.
But for it to be at 50 percent it didn't seem right so they tested it twice another set and again. So not sure.
