Why Are Wet Omelettes So Satisfying To Make?

I've never even heard of that. What am I missing out on?!

@NerdyPotato I find when you cook them low and slow, in a warm pan, on a cool surface of freshly melted butter, the omelettes come out jiggly. Fold them, then let them finish cooking in the pan, off the heating element.

They taste better, because there's no crisp or chew to them. Just soft, buttery, omelette.
