I Am a Meat Eater

Yesterday I did something different, I went a wild game cook-off.
Some of the meat I have never tasted before. I enjoyed every last bite I tried.
This is what was on the menu....

Roasted Duck Confit
Deep-Fries Turtle Bites
Smoked Elk Lasagna
Turtle Soup
Barbecue Bear Ribs
Braised Leg of Venison
Wild Boar Brunswick Stew
Deer Bologna with Banana Pepper Mustard
Jamaican Coconut Curry Turkey
Beer Braised Elk

I sampled each and every one of the meats. The Bear was surprisingly wonderful tasting. My favorite was the Roast Duck Confits. oh my!

I would like to try a buffalo burger.

@MrBrownstone I have had Buffalo before... They have a farm here in WV that raises them and sells their meat. Very costly, may I add. It does not taste like beef but it's ok.

@MrBrownstone I bought a pound of ground meat, looked the same in fat consistency as ground beef but a tad ..redder and stronger tasting.

@MrBrownstone I have had buffalo....a couple of restaurants near my cabin used to sell burgers made with it. The meat is a little drier than beef, the flavor is great and the cost is competitive. Those restaurants have to turn it over as they have to buy in fairly large quantities and it doesn't keep well unless frozen. It seems to be seasonal. This is buffalo that is farm raised.

Wild game can be problematic as so much depends on the animal's diet, condition, and the way they are handled and processed after the kill.
