My Fall Tradition
My version of Apple Jack. Pour off enough cider to fit enough bourbon in the 1/2 gal jug. Reserve cider and do cocktails "as is" or use for cider donuts. etc.
I usually start at 1 part bourbon to 2.5 parts cider for ~ 90 proof and go more like 1 to 3 for a barrel strength bourbon, ~ over 100 proof. Add 3 whole cinnamon sticks and 4-5 whole cloves. In the fridge for 5-7 days. Taste test. I usually add a bit more bourbon to taste and give another 3-5 days in the fridge. Shake and serve.
I've got 1 more serving of this batch after this. Peerless Barrel Strength Rye was a bit strong for my taste for sipping straight. It gave this batch a nice warmth and kick though.
