My only experience with "food I did not expect to be food" has been my grandfather cooking batter-fried pumpkin flowers. They were delicious.
So even though I have not had fava leaves, I can imagine there are all sorts of culinary surprises like that.

interesting, I never would've associated fava beans with Chinese cuisine, I just think of them as Mediterranean

@SnickersDOM it is certainly not their native plant but they are one of the largest producers of the crops!!

@Miram ah so I see as the greens mature, the vitamins move into the beans instead, so you could just eat both together I suppose (I like to eat diced turnips with turnip greens for example)
I wonder which microgreens do not have a corollary (edible) plant part you can eat (roots, stems, flowers, seeds) to get the vitamins once the greens mature
I'll never understand the whole eat-plant-x-for-mineral-y proposition though, it would seem like it would depend entirely on what region the plant is grown in, and what the soil composition is there, as to what nutrients you could expect
