I had an adopted Chinese Aunt who owned and ran a Chinese Restaurant when I was a wee one and I remember the noodles (I think) you are talking about.
If my memory serves me, they were wide, flat chow mein noodles that were fried and crispy, and served as a side dish. Gefen sells them in the wide and flat narrow style on Amazon.
