Waiter/waitress or server, which do you use?

Lately, I've heard them being called servers by almost everyone. Is this yet another PC phrase to add to the long list of others, such as calling actresses actors?

Any time I'm not "allowed" by the language police not to use a female version of a noun, i these days just substitute "goblin" for both

Chairgoblin
Policegoblin

Etc.

It's no less silly
