If you had to pick between milk chocolate or dark chocolate whats your preferred chocolate?

I can make chocolate. Dark, milk, and white. The beans are not as easy to come by anymore but i have a stockpile. Dark is more interesting as one can manipulate the flavor with the roasting process but a lot of it is dependant on where the beans are from and what types you are using. Milk chocolate flavor and texture can be modified in many ways. It depends on what you want. White chocolate is basically frosting made with cacao butter but most of the stuff you buy is made with palm oil. I guess i prefer Philippine, or Ecuadorian dark chocolate .
