I'm obsessed with egg rolls... Thinking about starting an egg roll food truck...
With different fillings and lots of sauce options.
I use the air fryer to avoid the grease. These are just kale and cabbage. Sesame oil and coconut "soy sauce" with onions, garlic, ginger and a touch of habanero. The sauce is creme fraiche with agave Sriracha.
I eat three every day for lunch. It's just right because I hate heavy food. Especially in the middle of the day.
And hell I'm moving to the city, I love working in food and I hate working for other people...

Food truck idea is great , especially because it doesn't leave you at the mercy of a landlord and rent ..at the restaurants I worked at , it was always a complete shit show between owner and landlord ...
It also gives you the option of working different locations .. And thh there is a bit of Americana romanticism eating at one ...
