I thought that all KFC’s were buffet, because that’s all I had seen growing up, but recently someone told me they stopped most of that.
@itsok Back in the 90's and 00's most did have optional buffets, but they actually bit into location profit, so most franchisees stopped them around '05 or so, according to the owner I worked for in '15.

@JohnnyNoir I told my franchise owner how to stop the loose breading issue, I told him to stop dipping it in water, breading in the lug (tub) and frying right away, the breading essentially "rides" on the water and cannot adhere to the skin, and needs at least 30 minutes to chill in a fridge on a tray, covered, to set. He didn't believe me, so I demonstrated with one bag of chicken, it turned out like I told him it would and it blew him away and we started preparing the night before, got about 20 trays of chicken prepared, and our reviews got far better. He asked me how I knew how to do this, so I gave him the old Calgon tagline, "Ancient Chinese secret".
