I've had fried turkey, and it's delicious, but it's not something I would attempt.

We roast the turkey; first third of the time breast down; rest of the time breast up - makes for a more even cook.

If a big turkey cooks breast up for the full time, the breast tends to finish cooking before the thighs, and by the time the thighs are done, the breast is dry. So it's good to have a mechanism to slow down the breasts, Flipping the bird 1/3 thru the cooking works quite well (I have a pair of silicone oven mitts perfect for turkey flipping).
I stuffed it with sprigs of sage and rosemary still growing in the garden and roasted it.

I always hear great things about fried turkey, but a friend's neighbor burned down their whole apartment building with one of those turkey fryers so I'll stick to roasting.

Roasted and while roasting, basted with butter and spices every 30 minutes.

I've had fryed (in peanut oil), and it is quite tasty, but I've never tried doing it myself.

My neighbor is a cajun. Fried turkeys are his specialty. He will take beer as partial payment.

I did an apple spice brine and then smoked it. Probably the best turkey I've ever had.
