What's one weird sandwich you like?

In Morocco we have a street sandwich popular in the North called bocadillos chamali

and another one in the South called lkhobza lmjnouna. It literally means the crazy bread, lol

I like a hybrid of the two

Filling is tuna, hard boiled eggs, mayo, carrot, parsley, mashed potatoes, rice and green olives!

Too much ik

but it's surprisingly good especially in summer 😋

The mashed potato ( and possibly the rice) sounds like overkill but the rest sounds absolutely delicious

Just a lil bit of both as they add a nice texture 😋

I think you would dig bocadillos chamali as it is then

It's basically the same but without the rice and has fries in it instead of mashed potatoes. Also more veggies can be added if you like such as tomatoes & onions etc

@SW-User Are there any recipes which use fried aubergine/eggplant rather than potatoes?

Hmm fried eggplant goes well in a sandwich with white cheese, tomatoes and harissa (hot sauce)

We also make a traditional dish which consists of grilled eggplants & sweet peppers that then get minced & fried in olive oil with tomatoes & spices. It's called zaalouk. Sooo tasty. Usually served as an appetizer or salad

It may also be used lightly as a spread in sandwiches with sausage/kofta
