How did people get to know that aged whiskey tasted better?

The way the story goes of aging whiskey in charred barrels is that in Kentucky, distiller Elijah Craig stored his excess whisky in a used barrel. He burnt out the inside of the barrel to clean it and came back the next year to a completely different product.

I do know that the nuances of flavor in Chivas Regal comes from the casks that the malted barley wait in.

@metaldog Like if I were the inventor of whiskey, I would not let it stay idle for 10 years to age if I didn't know what ageing would do to its texture.
