Can't get that time back

When I think of the times I spent making fudge or taffy, and the wasted and foggy results of the 'soft ball' or "thin brittle string" tests...smh.

Kitchen thermometer? What's a kitchen thermometer?

My mom made fudge and pralines that were absolutely perfectly crisp without being hard. Like they snapped at with just lip pressure and melted in your mouth. I don't think she knew what a cooking thermometer was, let alone a candy thermometer.

The booby prize for all my failed attempts at praline making is that the embarrassing results that never hold shape are easily hidden :)
