I’m thinking Pho noodle soup with the remaining half of rotisserie chicken (that I bought and used for chicken enchilada casserole last night) and veggies.

@meggie I got a package of gluten-free Pho noodles some time ago and just found them in my kitchen cabinet, it’s cold enough today to appreciate a steamin’ bowl of Pho.

@meggie I think that or Viet Nam…there is Pho noodle restaurant in the Viet Nam store building in OKC. You can get different versions of it. My friends are Thai and we went there and had Pho a couple times before shopping.
