Shrimp with pasta!?!?!?

I had it for lunch today. Not the same recipe. My version:

- Cherry tomatoes, halved.
- Small eggplant, peeled, and cubed (tiny cubes)
- Button mushrooms
- putted kalamata olives
- thinly sliced garlic
- dry white wine
- jumbo prawns, peeled and uncooked

- spinach broccoli dry pasta (lots of grocery stores carry them)

Start by sautéing the eggplant in a large pan with olive oil, until the eggplant is kind of brownish.

Add tomatoes, bring to a boil, and simmer for a half hour. Add garlic at this time.

Add mushrooms and cook for ten minutes.

Add prawns, olives and wine. Stir until prawns turn pink. Do not over cook.

Remove from heat and garnish with sliced fresh oregano. If you don’t have fresh oregano, use the powdered stuff in the earlier step when the tomatoes are added.
