@REMsleep bottom layer is a ginger biscuit. Then chocolate mousse, a layer of genoise, then a layer of custard, thinly slice vanilla pears, a coating of the sauce from the pears cooked to just under carmelization, then dusting of grated chocolate. The tough part is the custard. No idea how he did that.
