Was it only sold at one particular place?

@REMsleep in the corner of the Raffles hotel there was a little shop that sold pastries and tea. All kinds. This was my fave. The chef left and it was discontinued.

@REMsleep bottom layer is a ginger biscuit. Then chocolate mousse, a layer of genoise, then a layer of custard, thinly slice vanilla pears, a coating of the sauce from the pears cooked to just under carmelization, then dusting of grated chocolate. The tough part is the custard. No idea how he did that.

@Tastyfrzz Whew too much work. I guess if it was your passion you could spend time learning to make it lol.

@REMsleep no, but I went there many times for work. I have made it but the custard kept slipping off.
