My neghbor just gave me an enormous bag of Kale from his garden....any suggestions? Don't be crass

I find Kale holds up really well in soups since it retains its texture. I make a winter vegetable soup - brown some mushrooms, fry up some onions, then add frozen/canned tomatoes, some beans, a cup or two of chopped up squash, and finally loads of kale shredded up. Very satisfying.
