@SW-User Same here, the only veggie beef soup I eat is home made, leftovers from slow cooker beef roasts with veggies.

@SW-User I small to medium dice potatoes, celery, carrots, and onions, and put them on the bottom of a slow cooker, then I brown a 3.5 to 4 pound boneless chuck roast, put that on top of the veggies, then pour a bit of veggie broth into the pan to deglaze the fond off the skillet I browned the roast in, pour that and the rest of the can of veggie broth over that and a can of beef broth, high for six hours, low for two hours, it comes out nice and tender. The next day I cube the leftover roast and put it in a stock pot, add the rest of the veggies and jou, simmer for an hour, and viola, soup is served :D
