Do you store your eggs at room temperature or in the fridge?

Fridge because I buy pasteurized eggs.

If I had chickens, I wouldn't chill fresh unpasteurized eggs.

All egg products sold in the U.S that are pasteurized due to the risk of food-borne illnesses are done per U.S. Department of Agriculture rules. They also do not allow any egg products to be sold without going through the process of pasteurization.

People that store at room temperature typically have fresh eggs which still have bloom not entirely washed off. Bloom is a natural, anti-bacterial coating on the egg shell that acts as a protector for the inside of the egg, not allowing bacteria to get in. They don't keep as long on the counter as in the fridge but don't expire immediately.

Pasteurized eggs bought in stores are refrigerated. Bringing them back to room temperature the egg may sweat, opening pores and exposing the egg to potential bacteria so you need to keep store bought eggs refrigerated.

@Starcrossed yeah I know about bloom. We raised chickens for years but I didn’t know store eggs were pasteurized, I didn’t even know that was a thing lol
