Guess the alternative for flour in these waffles?

@GwydionFrost no it’s not. I stopped eating soy products, they are goitrogens, can mess with the thyroid function.

@cherokeepatti one noticing that it has a very fine consistency to it. Coconut flour or cauliflower flour?

@GwydionFrost not either one, I do have a variety of alternative flours but didn’t use any of them. And cauliflower would leave an aftertaste. I have use it to make a pizza crust, and it tastes good when I’m eating but geez later.

and honestly my initial thought was that you didn't use any flour at all but instead you something like a heavy cream so that the eggs got a more formative set up to create the waffle.

@GwydionFrost I didn’t use flour...the secret ingredient is mashed potatoes, leftover from another meal. Mixed about the same amount of potatoes with the two eggs, added a little more salt & some baking powder and mixed it up good.

@GwydionFrost yes. And they don’t stick to the waffle maker like wheat flour waffles do. Even in a nonstick waffle maker coated with pan spray it’s hard to get the first ones not to stick.

@GwydionFrost yes, I just eye-balled it. And the batter was thinner than regular waffle batter but the eggs firm up when it cooks.

@cherokeepatti it's going to seem weird but it is an important question really-- How firm do you like your mashed potatoes? LOL

@GwydionFrost not runny, I make them and let them simmer on low for about 10 minutes to firm up after I’ve added milk & butter.
