Egg muffins are awesome to have prepped. Egg whites, a couple whole eggs, lean ground turkey, sauteed onions and mushrooms, low fat cheese.

If just making some on the spot usually a bunch of egg whites with a couple whole eggs scrambled with some low fat cheese.
