Peasant food my dad called it - he grew up with a wood stove in his kitchen and he made the best bean tostadas he always told me we should never forget our family鈥檚 humble beginnings (i used to hate beans as a kid)

@KaysHealingPath It's suuuuuper easy. I love it for the simplicity. This is the recipe I usually use: https://www.allrecipes.com/recipe/62642/albondigas/

With some minor alteration. All the ingredients, meatballs included, can go into the soup raw before boiling and just bring it all up to boil together. Sometimes I go through the trouble of adding the tomatoes, peppers, etc.(what's in the salsa) but just using the can makes it a stupidly easy meal to put together when I'm not feeling up to anything complicated. You can also add minute rice to the meatballs to make them a bit more substantial and thicken the soup to a bit more of a stew consistency. And of course you can use base instead of bouillon for better soup, things like Better Than Bouillon, and add extra spices as you want(like garlic, red chili, paprika, etc.)
