Poached eggs, half slice toast, roasted tomatoes, and tea with milk!

I make omelettes quite often and almost always use fresh tomato slices in those. The trick is to add them at the last possible moment right before folding the omelette over so it retains a bit of its crispness. @Vivaci

Now you're singing my song. 😄 I usually start with what looks like a stir fry: olive oil, fresh spinach, diced peppers, onions, and even chopped asparagus sometimes. I let that sauté for awhile before I add the eggs. Then when it's almost cooked completely through, I flip it, add any meat, cheese, etc. to one side. Right before I fold it over, I add the tomato slices, fold it over, get it plated, and voilà! @Vivaci

@Vivaci Have you ever tried using flavor infused olive oils? I've got a whole rack of gourmet olive oils and vinegars that I use to punch up the flavor. Cilantro and roasted onion infused oil is probably my favorite for omelettes. I have a dill-infused oil that I really like for scrambled eggs. Then, I've got a smoked olive wood infused oil when I make potatoes for breakfast.
