What is your "go to" dish or meal when you cook for someone (or a group) for the first time?

Oxtail in red wine and samp
Samp is a food consisting of dried corn kernels that have been stamped and chopped until broken but not as fine as Mealie-meal or mielie rice....almost like coarse grits

@SW-User That sounds wonderful. I'm definitely making note of this one. I'm going to be doing quite a bit of cooking over the holidays, and this has holiday meal written all over it.

@SW-User Sometimes oxtail can be very fatty/choose leaner pieces and good luck. It comes out very sticky yummy falling off the bone. When you do your cooking and you stumble on an amazing recipe I hope you'll come back and share it with us.
