Dinner: What should be for dinner?

I'm just trying to think of different and creative dinner options (that hopefully aren't to hard to make).

So any suggestions? Or what you like?

Chicken breast stuffed with garlic herb cream cheese wrapped in bacon or pancetta served with buttery new potatoes and steamed veg.

@Primnproper You just made me so hungry with that! I think I'm going to the grocery store tomorrow to pick up supplies to make it. Definitely something I can make. You might also want to try a different stuffing that I do and it comes out beautifully. Defrost some chopped spinach, drain it, then mix it in with some ricotta, mascarpone cheese, and Italian herbs.
