Why is hot sauce in U.S. sour?

They are probably loading it up with vinegar as a preservative....I like Sriracha sauce, it doesn't taste sour.

@cherokeepatti I don't like the sour taste. So, it is to preserve the sauce? I thought U.S. People like sour style.

@FloorGenAdm Louisiana hot sauce tastes sour too...I guess it's OK on greens cause a little bit of sour tastes good on bitter greens.
