Potatoes are my favorite form of carbohydrate.
Russet potatoes are my favorite for baking - 400 degrees F for an hour, split open and slathered with margarine (not butter).
Yukon Gold potatoes are my favorite for roasting - cut into wedges, dredged in olive oil, and roasted in the oven.
I use Russets and Yukon Gold 50/50 for mashed potatoes.
