Favorite kind of quesadilla?

Flour or corn tortillas? Any special kind of cheese? Maybe you prefer just plain cheese quesadillas or you prefer chicken? Maybe some spice and throw some jalapenos or habanero in there? Maybe even some veg? What's everyone like? There's a million and one ways to make this classic.

I prefer a flour tortilla, and I’m fine with plain cheese (cheddar, pepper jack, etc.) or with chicken or vegetables added. I like mine spicy, my wife prefers mild. I’ve had them a number of different ways....and found them enjoyable every way I’ve had them.

@DragonFruit It's hard to go wrong with a quesadilla, honestly. They can even be made sweet instead of savory.
