Favorite kind of quesadilla?

Flour or corn tortillas? Any special kind of cheese? Maybe you prefer just plain cheese quesadillas or you prefer chicken? Maybe some spice and throw some jalapenos or habanero in there? Maybe even some veg? What's everyone like? There's a million and one ways to make this classic.

My favorite is grilled veggies- broccoli, cauliflower, onions, and carrots!! no cheese :) ..i know that's funny since cheese is in the name LOL but yah.. cheese takes away from the flavor of the grilled veggies.
