Do you follow instructions on how to prepare your Thanksgiving turkey?

I follow a some very good cooking guidance I received many years ago:

1. Select a range free tom turkey (unless your oven is too small; then a hen turkey is better).

2. Brine the turkey overnight in salted water mixed with some apple juice.

3. Don't stuff the turkey; put quartered apples and onions, some sage, savory and a stalk or two of celery into the turkey before roasting. Make your stuffing separately in a casserole.

4. Use an oven thermometer to tell when the turkey is done.

5. After roasting, allow the turkey to "rest" in its own juices for about an hour; turn over every 20 minutes.

6. Save carcass and bones for turkey soup.

If all the above seems like way too much to do, don't skip any of the steps. Instead, decide to let a supermarket make you a pre-cooked turkey dinner for a price and save your spirits for coping with the family feast day.
