What is the difference between learning your kid and handicap?

When it comes to playing backyard sport type activities with young kids, why is it that being adult seems to always win pretty quickly? Also, should you let your kids win? Is that the same thing as handicapping? How do you play with your little one? Can you give a couple of examples of sport activities that you play with them?
