Some folks get offended easily. They can't take a joke or light-hearted humour. Worst, when you apologise to them, they won't accept your apology either. You give them the opportunity to reciprocate, they end up crossing the line. That leads to an unnecessary squabble.
I have come across such a person twice so far.
This one I'll never forget.
It happened 7 years ago. I met some cool people during an official project. It was our (all of us together) first day. I made fun of myself to break the ice. Then, I cracked a joke on others in the room. Most laughed along except one. He could not take it. End result, you already know it.
