It always goes easier if the eggs are NOT fresh.

Put the convicted eggs into a pan. Cover them with water and when the water is at “a full boil” turn off the heat and put a well-fitting lid on the pan. Wait 12 minutes and voila! Hard-boiled eggs!

@Mamapolo2016 It gives hard-boiled eggs, but I get highly variable results with how easily the shell separates from the innards.

@SomeMichGuy That’s usually caused by eggs that are too fresh. Give ‘em a chance to calm down for a couple of days. And after the 12 minutes is up, give ‘em a cold bath. I think the membrane shrinks back trying to get out of the frigid water. That’s my theory.
@Mamapolo2016 I do an ice-cold bath--part of the recommendations!--and I agree that the egg's internals likely contract a bit more than the shell.

Not sure about "too fresh"...they are shipped from elsewhere...
