If you accidently added/liked someone who actually rejected you

Depends on the situation and how you were rejected.
Heck if you are being rejected through a block there really isn't much you can do. Only others can intervene.
Note they actually have the ability to remove you themselves from their follow list. And in a couple of ways. You wouldn't know either way unless you checked.
