Maple syrup (for me) is toooo sweet, like spine chilling sweet. Though a good taste.
To bring down the sweetness a tad I blend it with molasses. About 5 to one, 5 parts maple syrup to one part molasses. 5 to 10 seconds in the microwave will help them blend. Perfect for pancakes and waffles!
It's really the only option. As a kid we had pure cane syrup, though good it was still not quite as good as maple syrup. But cane syrup has pretty much vanished from the shelves. Replaced by (yuck!) corn syrups.
I probably didn't eat my first pancake until I was a teen. My grand-aunt managed the kitchen and her specialty was thin crepes rolled with melted butter and sugar.
