One way a protein works is by physically changing its shape.

For example the outer layer of the cell has a barrier to the outside world. And some of the amino acid making up that protein can be positive or negative. So through polarity parts of the protein can attract or repel each other the change shape. On that later a protein can open or stay closed allowing certain molecules in and out of the cell.
